Pumpkin Waffles

My mom gave us this recipe and it is so so so good. We absolutely love it!

1 c. pumpkin
1 1/2 c. milk
6 T butter
1 T vanilla
4 eggs, separated
2 c flour
2 T baking powder
1 T sugar
1 T cinnamon
1/2 t nutmeg
1/4 t coriander
1/4 t salt

Mix together dry ingredients. Mix together wet ingredients, except for eggs. Separate eggs; add yolks to wet ingredients. Add wet ingredients to dry and mix until blended. Beat egg whites until stiff; fold into batter. Cook (this can also be used as pancake batter).

SYRUP: In a LARGE saucepan combine 1/2 c. butter, 1 c. buttermilk, 2 c. sugar and 2 T. corn syrup. Bring to a boil. Remove from heat. Add 2 t. vanilla, then 2 t. soda. Stir briskly--IT WILL FOAM A LOT, be prepared. Serve over pancakes and enjoy.

Mom told me that Melanie Tidwell's mom had given her the recipe...I have got to write that down...I use to ask for them every time I would go over to Mel's house!
